Warm Winter Quinoa Bowli

Ingredients

    1 cup Quinoa, cooked according to package
    1/2 red bell pepper, diced
    1 bunch of broccolini
    1/2 cup shredded carrots
    1 cup arugula
    1/2 cup chick peas, drained
    1 tbs everything but the bagel seasoning
    1 tbs krazy Jane seasoning
    1/2 cup olive oil

Dressing

  • 1/4 cup olive oil
  • 1 tbs hummus
  • 1/2 tbs minced garlic
  • 1/2 tbs Dijon mustard
  • 2 tbs soy sauce
  • 1/2 tsp lime juice
  • 1/2 tsp lemon juice

Steps

  1. Set oven to 450 degrees
  2. Cut broccolini in half, set the bottom half (stem part) of the broccolini to the side
  3. On a baking sheet, toss the top half of the broccolini in 2 tbs of olive oil and season with salt and pepper
  4. On another baking sheet, add chick peas and toss with 2 tbs olive oil, krazy Jane seasoning and everything but the bagel seasoning
  5. Place both baking sheets in the oven – bake broccolini for 15 minutes or until broccoli is crispy (use a spatula to move the broccoli and chickpeas around midway through to avoid burning). Bake chickpeas for an additional 10 minutes or until crispy
  6. Set both baking sheets aside
  7. Chop stems of broccoli into 1/2 inch pieces
  8. In a frying pan, add 3 tbs olive oil and bring to medium heat. Add diced pepper, broccolini stems and carrots and sautéed (stirring often) for 10 minutes
  1. Mix all dressing ingredients together in a jar
  1. Add cooked quinoa, broccolini tips, arugula and dressing and cook for another 3 minutes
  2. Serve with chickpeas sprinkled on top and enjoy!
