Lettuce Tacos

Ingredients

  • 4 chicken thighs
  • 1/2 cup bbq sauce
  • 1/4 cup water
  • 1 tbs apple cider vinegar
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup red onion, chopped
  • 1/2 cup black beans
  • 1/4 cup mozzarella cheese
  • Avocado, smashed into a bowl
  • 1/4 cup sour cream
  • 1/2 tbs olive oil
  • 1 tbs lime juice
  • Leafs of Boston lettuce

Steps

  1. In a deep pan, add chicken, bbq sauce, water and vinegar – cover and simmer for 20 minutes
  2. While chicken cooks, mix chopped tomatoes, cilantro and onion together – drizzle with olive oil and add salt and pepper to taste – set aside
  3. Once chicken is cooked, shred the chicken apart with two forks
  4. Lay lettuce leafs down
  5. Add chicken, top with tomato salsa, black beans, smashed avocado, sour cream and cheese
  6. Top with a squeeze of lime juice and salt and pepper to taste if desired
