Pumpkin Waffle Cone

  • Nordic Ware pulp-apart waffle puffs pan
  • Ingredients
    • 1 cup gluten free pumpkin pancake mix (Trader Joe’s)
      1 egg
      2tbs butter
      1/2 cup water + 2tbs water
      Handful raspberries
      2 tbs Nutella
      Powdered sugar to sprinkle ontop (optional)
      Trader Joe’s candied pumpkin seeds to top (optional)

    Steps

    1. Melt butter and whisk with egg
    2. Whisk in water
    3. Whisk in pumpkin mix
    4. Heat skittle over medium heat – add pancake mix (you do not need to fully cover the skittle as it will spread once you close the skittle – if you add to much it will overflow over the sides)
    5. Cook on each side for 2 mins
    6. Flip onto plate – spread Nutella and fold each side inward to make a cone
    7. Sprinkle raspberries, pumpkin seeds and powdered sugar over the plate
    8. For additional decoration – add a spoonful of Nutella into a plastic bag – cut a small hole on the bottom corner of the bag and drizzle chocolate over waffle in a zigzag motion
