Gourmet sausage dog
Sweet potato fries
Perfect to pair with the cuke and chickpea salad! (See here)
Ingredients
Gourmet Slider
- 1 1/4 lb Pulled pork loin
- 1/4 Cup water
- 1/2 Cup BBQ sauce
- 1 tbs apple cider vinegar
- Arugula to top (1 Cup)
- Slider buns (as many as needed – pork will allow for 10)
Gourmet Sausage Dog
- Hot dog buns (10-12)
- Sausage wheel (I used chicken and cheese sausage)
- 2 corn on cob
- 1/4 Cup shredded carrots
- Parsley
- 1/2 Cup Mayo
- 1/2 lemon
Sweet potatoes fries
- 2 sweet potatoes (depending on how many people (1 per person)
- 1/4 Cup olive oil
- 1 Tbs salt
Steps
Gourmet Slider
- Cut loin into 4 pieces
- In large pan, add pork loin, bbq sauce, water and apple cider vinegar and simmer for 20 minutes
- Using two forks – remove pork from pan and shred
- Turn oven to broil and toast slider buns – watching carefully as buns will burn quickly (less than a minute)
- Spoon shredded pork on top bun, top
- Top with 2-3 sweet potato fries
- Add arugula and enjoy!
Gourmet sausage dogs
- Set oven to 450 degrees – wrap corn (dehusked) in aluminum foil – place in oven and cook for 40 minutes (unwrap foil at the end and broil on each side for 1 minutes each or until slightly charred
- Keep oven on broil – add sausage and cook for 7-10 minutes one side (or until crisped) – flip and cook for same amount of time on the other side
- Remove from oven and slice into 4 inch pieces
- Toast hot dog buns in oven on broke – again watching carefully to not burn
- Cut corn off husk
- Place sausage in hot dog bun- top with corn, carrots and parsley
- Mix mayo and juice of half a lemon – drizzle over sausage dog
Sweet Potato Fries
- Peel sweet potatoes and cut into fries shape
- Set oven to 450 degrees
- On a baking sheet – mix sweet potatoes, olive oil and salt with you hands – spreading them out evenly to cook evenly
- Bake for 20 minutes- mixing them with a spatula at the ten minute mark
- Remove from oven and let cool 5 mins
