Ingredients
- Chicken and cheese sausage wheel (or any sausage of your choice
- Assorted mini sweet peppers (sliced in half and deseeded)
- 1/2 purple onion (diced in large chunks)
- 1/4 Cup white wine (I used Chardonnay)
- 1/4 Cup olive oil
- 2 tsp salt
- 1 TVs minced garlic
Steps
- Turn oven to broil – place sausage wheel in pan and place in oven
- After about 7-10 minutes (or once sausage is lightly crisped on top) flip sausage over and brown on the other side for about 7 minutes
- While sausage is cooking – place onions and pepper in a pan – cover with half of the olive oil and full amount of salt
- Once sausage is done- let sit on top of the your stove
- Turn oven down to 450 degree and roast onions and peppers for 15 minutes – flipping with a spatula every five minutes
- While peppers and onions roast- add remaining olive oil and garlic to a pan – simmer until golden brown (about 3 minutes
- Add wine to oil and garlic and let wine cook off (about 5 mins)
- Add roasted peppers and onions and sausage and cook for 3-5 minutes
