Inspired by Modern Proper cucumber salad recipe with modification to dressing to simplify
Ingredients
- 1 cucumber
- 1 can chickpeas rinsed
- 1/4 Cup torn parsley
- 1/4 Cup torn mint
- 1 tbs dill (pull leaves off of the bunch but don’t chop or tear)
- 1/4 purple onion sliced fine
- 1/4 Cup plain yogurt
- 1 tbs zest of lemon
- 2 tbs olive oil
- 1/2 lemon (for juice – you can use this for the zest as well)
Steps
- Place dukes on a plate – spread out, overlapping slightly
- Top with sliced onion and chickpeas – spreading out evenly around the plate
- Sprinkle parsley and mint on top- evenly across the plate
- Place dill gently on top, spaced evenly
- Sprinkle lemon zest for color
- On side of dish – mix yogurt, lemon juice and olive oil and place in small dish – with mint for garnish
