Sesame Soba Noodles

Ingredients

  • 1 cup chick peas drained and dried
  • 1 cup chopped carrots
  • Olive oil to drizzle
  • 1 1/2 cups soba Noodles (cooked as instructed and rinsed under cold water)
  • 1 cucumber sliced
  • 5 radishes sliced
  • Arugula
  • Sliced lime
  • Salt
  • Sesame seeds to top

Sauce

  • 1 tbs tahini (or hummus)
  • 1 tbs almond butter
  • 1 tbs olive oil
  • 1 tsp minced garlic
  • 1 tbs lime juice
  • 1 tbs rice vinegar
  • 2 tbs warm water
  • 1/4 tsp maple syrup
  • Sea salt

Instructions

  1. On a baking sheet spread chick peas and carrots – drizzle with olive oil and sprinkle with salt and pepper – bake for 20 mins at 450 degrees
  2. Mix ingredients for sauce in a bowl and whisk
  3. Add cold noodles to sauce
  4. Mix arugula, cukes, radish, chickpeas, carrots
  5. Sprinkle with sesame seeds (and soy if desired)
