Ingredients
- 1 cup cooked farro
- 1/4 cup torn parsley
- 1 chicken breast
- 1/2 lemon
- Drizzle of olive oil
- Drizzle of balsamic
- Drizzle of balsamic glaze
- Salt and pepper to taste
- 1/4 cup sliced carrots
- 2 pieces of toast
Steps
- Add 1 tbs olive oil to a pan – turn to medium low heat – cook on each side for 5 minutes
- Lets chicken cool – shred using fingers or a fork
- In a bowl, mix farro, sliced carrots, chicken, and torn parsley
- Drizzle mixture with olive oil, balsamic and salt and pepper to taste – squeeze 1/4 lemon wedge on top
- Spoon mixture into two pieces of toast- top with balsamic glaze and garnish with parsley – use remaining lemon wedge for deco
