Ingredients
- 1/2 cup cashew milk (you can substitute with regular milk or almond)
- 1/4 cup of light ricotta
- 1 cup frozen blueberries
- 3-4 full frozen strawberries
- 1/2 banana
- 1 tbs shredded coconut
- Optional: 2-3 drops blue food coloring
Steps
1. In a blender, add ricotta, milk, and frozen berries (and food coloring for a brighter purple/blue color) – blend
2. Add mixture to bowl, sprinkle half the bowl with coconut in a moon shape
3. Slice banana into 1/2 inch pieces – Using a star cookie cutter, cut mini star shape* and arrange over the coconuts
