Noodle Salad

Ingredients

  • 1 cup frozen unshelled edamame
  • 3/4 cup chopped carrots
  • 2 cups rice noodles
  • Sesame seeds to taste
  • 1/4 cup low sodium soy sauce
  • Sliced avocado (about half of an avocado needed)

Steps

  1. Follow instructions on frozen edamame package to cook
  2. Soak cooked edamame in cold water to cool and drain
  3. Boil water in a pot – add rice noodles and cook for 2-3 minutes
  4. Drain and soak in cold water to cool noodles
  5. Drain noodles – mix with edamame and carrots; top with avocado slices, sesame seeds and soy sauce to taste
  6. Enjoy!
