Ingredients
- 1 cup frozen unshelled edamame
- 3/4 cup chopped carrots
- 2 cups rice noodles
- Sesame seeds to taste
- 1/4 cup low sodium soy sauce
- Sliced avocado (about half of an avocado needed)
Steps
- Follow instructions on frozen edamame package to cook
- Soak cooked edamame in cold water to cool and drain
- Boil water in a pot – add rice noodles and cook for 2-3 minutes
- Drain and soak in cold water to cool noodles
- Drain noodles – mix with edamame and carrots; top with avocado slices, sesame seeds and soy sauce to taste
- Enjoy!
