Super easy lunch recipe!
Ingredients
- 1 cup arugula
- 1 small cucumber
- 5 tricolor tomatoes, cut in half
- Handful of microgreen
- 6 large de-vained shrimp
- 1/4 mozzarella
- Olive oil and balsamic reduction (can be bought pre-made at most grocery stores) to taste
- Salt and pepper to taste
Steps
- Remove shells from shrimp
- Add 1 tbs of olive oil to a pan and set to medium low heat – add shrimp and sprinkle with salt and pepper – cook until bright orange (about 5 mins each side)
- Add arugula to a bowl- top with tomatoes, shaved cucumber, mozzarella and warm shrimp
- Add olive oil and balsamic to taste (I placed dots of balsamic reduction on the cucumber)
- Add salt and pepper to taste
- Top with microgreens
- Enjoy!
