Ingredients
- 12 baby neck clams
- 1/4 lb angel hair Pasta
- 3 garlic cloves, minced
- 3 tbs chopped parsley
- 1 tbs oregano
- 1/2 tbs butter
- 1/2 cup olive oil
- 1/2 cup white wine
Steps
- Wash and clean clams thoroughly, using a paper towel or clean sponge to remove dirt from the shells
- Place clean shells in cold water for 3 hours, drain and resubmerging in fresh water every hour
- Remove clams from water
- In a separate pan, fill with water and boil for the pasta
- In a frying pan, place cleans clams spreading out across the pan, cover in olive oil, garlic, parsley, wine and oregano – cook on low/medium heat until all shells open (about 7 minutes) – add butter at the end
- While clams cook, add pasta to boiling water and cook for 2 minutes
- Drain pasta and add to clams and clam juice
