Italian Eggs


Ingredients 

  • 2 tbs olive oil
  • 2 eggs
  • 5 diced multi-color grape tomatoes 
  • 3 basil leaves 
  • 3 tbs diced onion
  • 1/4 cup mozerella (fresh or shredded)
  • Salt and pepper to taste 
  • Optional: Toasted italian bread 

Steps

  1. Heat up oil in a small frying pan on medium-low heat
  2. Add onion and cook for 1 minute
  3. Add tomatoes and cook for an additional 3 minutes
  4. Shred basil leaves and add to tomato/onion mixture
  5. Stir in mozerella 
  6. Crack 2 eggs and add to pan, cover with lid and cook until the eggs form a white cover (2-3 minutes)
  7. Top with salt and pepper to taste
