Ingredients
- 2 cups of pre-cooked brown rice
- 1 pineapple
- 3 tbs of olive oil
- 1 cup of onion chopped finely
- 1 cup of red peppers chopped finely
- 1 cup of carrots chopped finely
- 1 cup of green cabbage chopped finely
- 1 small red chilli finely chopped
- 3 tbs of roasted cashews
- small pinch of salt and pepper
- 1tbs soy sauce
- Optional: Micro greens + sesame seeds for decoration
Steps
- Precook your rice as instructed on rice container / package
- Cut pineapple in half and gut the center, leaving about and inch of pineapple around the outside uncut
- Take the pineapple that was removed and cut into small pieces, set aside
- Turn oven on broil- add cashews to a pan and roast until browned (watching carefully, around 1-2 minutes)- set aside
- Add oil to a frying pan and set to medium/low heat
- Add in all vegetables and sauté for 8-10 minutes (or until onions become translucent)
- While vegetables are cooking, take half of your roasted cashews and chop finely
- Once vegetables are done cooking, add rice, pineapple and cashews and mix well
- Spoon mixture into pineapple bowls
- Top with micro greens, sesame seeds and remaining cashews, sprinkle with low sodium soy sauce
