Edamame Dumplings


Ingredients 

  • 1 bag frozen edamame shelled 
  • 1 tbsp ginger, peeled and minced
  • 3 scallions, white and light green parts chopped
  • 1/2 clove of garlic 
  • 1/4 cup cilantro, chopped
  • 1 tsp lemon zest
  • 2 tsps sesame oil
  • 1/2 cup sour cream
  • Won ton wrappers or rice paper 
  • avocado oil for pan frying
  • Topping: teriyaki sauce 

Steps 

  1. Cook edamame as directed on the package (microwave or boil)
  2. Add all ingredients together (with the exception of the avocado oil and topping) and pulsate in a food processor 
  3. Dip rice paper or wonton paper in warm water to soften (use directions in the back of the rice/wonton paper package to ensure right consistency)
  4. Add a tablespoon of the edamame cream to the center of the paper and fold
  5. Heat avocado oil in a pan at medium to low heat frying each side until golden brown 
  6. Top with teriyaki sauce
