Ingredients
- 1 bag frozen edamame shelled
- 1 tbsp ginger, peeled and minced
- 3 scallions, white and light green parts chopped
- 1/2 clove of garlic
- 1/4 cup cilantro, chopped
- 1 tsp lemon zest
- 2 tsps sesame oil
- 1/2 cup sour cream
- Won ton wrappers or rice paper
- avocado oil for pan frying
- Topping: teriyaki sauce
Steps
- Cook edamame as directed on the package (microwave or boil)
- Add all ingredients together (with the exception of the avocado oil and topping) and pulsate in a food processor
- Dip rice paper or wonton paper in warm water to soften (use directions in the back of the rice/wonton paper package to ensure right consistency)
- Add a tablespoon of the edamame cream to the center of the paper and fold
- Heat avocado oil in a pan at medium to low heat frying each side until golden brown
- Top with teriyaki sauce
