Ingredients
- 2 pieces of multi-grain bread
- 1 tbs. almond butter
- 3 strawberries
- 3-4 blueberries
- 7 goji berries
- sprinkle of granola (quinio is my fav!)
- 1/2 avocado
- sprinkle of sunflower seeds
- sesame oil
- salt to taste
Steps
Toast 1
- Toast bread
- Slather with almond butter
- Dice 1 strawberry and lay in a semi circle around 1/2 of the toast
- Add goji berries in the same semi circle shape
- Cut blueberries in half and repeat semi-circle display (seen in photo above)
- Add granola to the end
- Using a heart shape cookie cutter, cut the next strawberry and place at the bottom corner of the toast
Toast 2
- Toast bread
- Cut avocado in half (length wise)
- Spoon entire avocado half out of the shell in one piece
- Lay the half avocado on a cutting board (with the outside of the avocado facing up, horizontally in front of you)
- Starting at the right end of the avocado, slice vertical slivers across the entire avocado
- Using your fingers, smush avocado so the center pushes upwards
- Then, start to move your fingers so the avocado slices become diagonal (still in one line)
- Starting on the left side, start to roll the avocado line into a circle, wrapping around itself to create the flower effect
- Place avocado on toast
- Sprinkle with sesame oil, sunflower seeds and salt
- Add strawberry to the center
