Who needs canned sauce? Ok, sometimes me – but it’s always nice to try the truelly from scratch version of spaghetti sauce!
Ingredients
- 1 package of tricolor medium tomatoes (4-5 tomatoes)
- 1 tablespoon salt
- Pepper to taste
- Whole grain spaghetti
- Parmesan cheese
- 1/4 cup Olive oil
- 2 cloves Garlic minces
Steps
- Boil water
- Add tricolor tomatoes and cook until skin begins to peal
- Remove tomoatoes from water and peel skin (let tomatoes cook first to avoid burning your fingers)
- Crush tomatoes in a bowl with your hands
- Add 1/4 cup olive oil to pan
- Set to low heat
- Add garlic and cook for 2-3 minutes
- Add crushed tomatoes to oil and garlic
- Add salt and pepper
- Turn to boil
- Return head to medium low and cool for 20 minutes
- Cook pasta until altente and drain
- Return pasta to pan and crack one egg into the pasta mixing around pasta until cooked
- Add sauce
- Serve and sprinkle with Parmesan cheese
